How to get your garden kid ready! | Blog

Last week I finally thought that spring had sprung and we were well on our way to getting some decent sunshine. Then storm Doris came along and literally blew that out the window but it still hasn't stopped me from thinking about getting ready to get in the garden with pickle. He loved being outside in the garden last summer and I can't see this year being any different. The brief glimpse of sun got me thinking about what I can do to get our garden more child friendly now that he is that bit older and wanting to explore so much more so I thought I'd share my ideas with you!

1. Simply Plastics Garden Mirror.
I have been thinking recently been thinking about how we can make our garden look more kid friendly without making it look like a nursery garden and this Garden Mirror from Simply Plastics

Slimming World 1 Syn Brownies | Recipe

Since being on slimming world I have missed sweet things and have been on a constant hunt for low syn recipes that will give me that chocolate  hit! I have come across some seriously nasty recipes including pancakes made from egg whites and a cake in a mug that was literally like chocolaty scrambled egg (vommmm) but this recipe for 1 syn chocolate brownies really hit the spot! I did change a few things around from the original recipe that I found but they are still really low syn and amazingly scrummy!!!!

Ingredients:
  • 6 eggs (separated with whites in one bowls and yolks in another)
  • 50 grams Cocoa Powder - 11 syns
  • 25 grams sweetener (I used the powdered kind but if you are using granulated then use 50gs)
  • 1 TSP vanilla essence
  • 1/4 TSP baking powder - 0.5 syns
  • Touch of water
  • 10 grams chocolate chips (I used dark as it was what I had) - 3 syns
Makes:                           14
Total syns:                     14.5
Syns per serving:          1!!!

Method:

  1. Pre heat your oven to gas mark 4 or 150 c and line a shallow baking tin with baking paper.
  2. Grab your bowl with the egg yolks in and add your cocoa powder, sweetener and vanilla essence. Add the dry ingredients gradually as it can become very dry. If this happens just add a touch of water but do be careful of making the mixture too wet.
  3. Use an electric whisk (or a manual one if you have guns of steel) to whisk your egg whites until you get soft peaks.
  4. Fold your chocolate mixture into the egg whites. Be gentle with the mixture so you keep as much as the air in as possible. Make sure your mixture is fully incorporated.
  5. Pour your mixture into your baking tin and sprinkle your chocolate chips over the top. Bake in the oven for 15-20 mins or until a cake skewer comes out clean from the middle.
  6. Once cooked leave your brownie to cook on a rack for 10 mins and then cut into 14 square serving.
Enjoy and make sure you tweet me @mymummyspam with any pictures of the scrummy brownies you make!!!

Is your home baby safe QUIZ | Blog

Recently Rattan Direct sent me a really interesting quiz all about baby proofing your home. They share the shocking statistic that half a million children under the age of 4 are hurt in the home each year and the majority of these incidents are preventable. Don't get me wrong, children do get hurt. They get bumps to the head and bruises as (if they are anything like pickle) they are constantly climbing and running but what about the really important things that we can prevent and need to know about. Do you know what the biggest danger is to children when it comes to choking? Do you know what Christmas items are poisonous to babies? Rattan Direct have created a quiz to help test out knowledge and help in any areas that we could use a little guidance.

Click here to take the quiz for yourself.

I took the quiz and am pretty pleased to say that I got 9/10!! (I feel like the class boffin again!)The only thing I got wrong was about scalding temperatures. The actual temperature that scalding occurs is higher than I thought. I think I am a bit too over protective about safety sometimes but it's still good to check and make sure your in the know.

So how did you score?? Let me know in the comments below!

Healthy Cooking Gadgets | Blog

Ever since I have been focusing on loosing weight and getting fit I have become very conscious of what I am putting into my body and the way we cook our food. This time last year I would have thought nothing of using a deep fat fryer or just grabbing tins or jars of soup and things rather than making my own. Fast forward to now and I can't remember the last time I used a jar of sauce or deep fat fried anything. I am all about home making whatever I can and cooking it in the best way possible as then I can control what is going into my body. So, I thought I would share with you a couple of my favourite gadgets that I use in the kitchen that have helped me lead my healthier life style.

1. A Bread Maker
Bread is notoriously bad for you...well most types anyway but on slimming world you can eat Wholemeal bread as your Healthy option B. I am yet to find one that you can buy in the shops that I love as much as I love white bread so I thought I would try making some in the bread maker and it was amazing!!! I use this recipe and it comes out so soft and yummy...just like getting it out of the bakers. You can find whole range of Bread makers by Panasonic here.

2. Juicer and smoothie maker.

Now this isn't just great for me when I want a quick and easy breakfast. It is also fab for making smoothies for pickle as he loves them. It also saves me a hell of a lot of money as some of the kids smoothies you buy in the stores are extortionate!

3. Air Fryer.

We brought one of thee a few months ago and I love it!! The chips and roast potatoes that we get out of our air fryer are so amazing. They are crunchy on the outside but fluffy and soft on the inside. It's like they have been cooked a deep fat fryer but with out all the calories and fat in them! Only downside is that they take a little longer than a normal fryer but when the chips are that yummy and good for you it is certainly worth the wait.
So there you have it. My most used healthy cooking gadgets. Do you have anything that helps you cook and eat healthier at home? Let me know in the comments.

How to cope when a sick bug strikes!! | Blog

The other week we were struck down with the nastiest bug I think we have ever had the displeasure of getting. It started with Bubba throwing up on Wednesday and I thought to myself ''Oh maybe it's just a 24 hour bug and he will be alright tomorrow''. Boy I was wrong and to make it worse, the bug swept through the whole of the house taking no prisoners as it went. I started throwing up a couple of days later and then hubby caught it. Then, just when I thought Bubba was getting better the diarrhoea started!! I won't be too graphic but all I will say is that we were going through about 5 nappies every hour for pickle, I could barely get off the loo myself and the term 'thunder belly' became a well known phrase in our house!! It was a pretty horrific few days and it got me thinking about how I coped with being ill and looking after a poorly pickle at the same time. It sure as sunshine wasn't easy but I have come up with some top tips to help if you are every in that rubbish situation.

Being a part time parent | Blog

This last week has been a proper shit parenting week. Not because pickle has been a pain...in fact it's the opposite. He has been learning new words, playing with all his favourite toys and just generally being his normal cheeky, loving, wonderful self. The shit part is that I haven't been around to enjoy it and I have been left feeling like a part time parent which is also pretty shit.
FYI...apologies for the use of the word shit through out this post but it describes perfectly how I am feeling right now so I am going to use it.

Finding the right profesional | Bidvine Collaboration

Hubby has always been pretty handy when it comes to DIY and stuff that needs doing in the house. He used to be a plasterer and builder before he starting doing security work so knows what he is doing most of the time. But since we had pickle his priorities have changed and he would now rather spend an afternoon playing with pickle than doing DIY which I can totally understand but it has left us in a bit of a predicament when it comes to finding a trustworthy, reliable tradesman if we have any jobs that need doing. That is where Bidvine comes in!!
